As the saying goes, mothers know best!
My momma’s banana bread is simply the best. Whenever I missed my mom in college or when I lived in California, I would make this bread. Now that I live in Chicago, and get to see her all the time (yay), it has become one of those “foods I always have in my kitchen” type things. I don’t know if it’s the fact that it’s a dear memory from my childhood, or that it is flipping deeeee – licious, but either way this banana bread is so very special.
what you’ll need:
2 or 3 ripe bananas
1 stick of butter
1 cup of sugar
1 egg
2 cups of flour
1 t baking powder
1/2 t baking soda
1/2 t salt
1/2 t cinnamon
*optional: depending on my mood I’ll add chocolate chips or nuts or anything else I want to spice things up!
what to do
combine in a bowl:
2 or 3 ripe bananas
1 stick of butter
1 cup of sugar
1 egg
in another bowl mix together:
2 cups of flour
1 t baking powder
1/2 t baking soda
1/2 t salt
add to the banana mixture.
pour into a {mini} loaf pans (and sprinkle with cinnamon).
bake at 350 for 55-60 minutes.
let cool.
Just so you know, every single banana cake, muffin, bread, cupcake I have ever made has been based off of this one recipe. I just think everyone should have a yummy {simple} old-fashioned banana bread recipe in their baking repertoire.
