This is my “go to” side dish for our summer dinners on the deck. Mainly because everyone just devours it, and mostly because it’s so simple to create.
The yummy couscous combined with crispy cool cucumber, juicy robust tomatoes, salty soft feta, fresh flavorful basil and sweet craisens all tossed with a lemony-balsamic vinaigrette is just perfect. It’s summer in side dish form.
The hardest part of this side dish is boiling water – seriously. If you can boil, chop and stir, you can create this dish. No oven, no baking, no nothin’!
More time to spend sipping your rosé on the deck, gabbing about life with the people you love.
what you’ll need:
2 cups couscous or 1 package of couscous
1 Tbsp olive oil
2 cups cherry tomatoes
2 cup cucumber, diced
dried cranberries or craisens
arthicoke (if you wish)
lots of feta (however much you like)
lots of basil (same)
salt + pepp
what you’ll do:
1. cook the couscous
2. chop up the tomatoes, cucumber, basil and feta, etc. (all the ingredients you want to add)
3. combine the couscous and chopped ingredients in a cute bowl (presentation, people!) and toss.
4. Add a pinch of salt, pepper and splash of fresh lemon, and 1 tbsp of olive oil. Tossing once more. Taste for seasoning adding more salt and pepper if needed.
