I don’t know about you guys, but all that cooking and preparing and shopping and oven timing does not do justice for just ONE delicious meal with the family. So when I woke up Thanksgiving morning, still with a household full (which I love) of guests, I was determined to make another meal out of the Thanksgiving leftovers. A brunch to be exact.
This frittata is SO simple. And gets the house smelling all the delicious Thanksgiving smells we love.
what you’ll need
2-3 cups of leftover stuffing
6-8 eggs
3/4 cup milk
1/4 teaspoon ground fresh nutmeg
parm cheese
salt/pepper taste
1 -2 cups of leftover cubed or shredded turkey
what you’ll do
1. Put a skillet on the stove with a little bit of butter and heat up the turkey/stuffing and whatever goodies you want to add.
2. Pour the whisked egg/milk/nutmeg mixture over the top and let sit on the stove for 5-7 minutes
3. Sprinkle with parm cheese and pop it under the broiler for another 5-7 minutes or until its nice and fluffy!
