The way the toasted coconut adds a tiny crunch to the bigger crunch of the almonds, while enrobed in delicious dark chocolate is well, simply magical {+ gluten free}.
you’ll need:
- coconut
- dark chocolate
- raw almonds
- vegetable or coconut oil
- wax paper
the beautiful bitty bites process
- toast coconut: put a handful of coconut on a baking sheet and put your broiler on low. This is kind of a “watch it and see” when it’s perfectly brown and toasty.
- melt dark chocolate: melt a cup of dark chocolate chips with a splash of oil in the microwave for 60 seconds at a time. stirring in between. once the chips are melted, it’s time.
- wax paper: after setting out a strip of wax paper, grab a spoon and start dolloping small spoonfuls of the gooey chocolate on the paper. place 2 almonds and sprinkle with the toasted coconut.
- you did it! wasn’t that so easy? aren’t they so yummy!
- tip – i like to freeze these, makes them even more crunchy and makes me eat them less when they are stuffed away in the freezer (okay, that’s a lie).
